Hello all, my name is Lindsay!
I’m a self-proclaimed nerd/future doctor/novice rock climber/voracious reader/geography trivia expert/burgeoning chef/intrepid explorer/slow runner/spastic dancer/wannabe Broadway singer/aspiring mountain mama and MORE.
Beyond my inability to categorize myself in a succinct manner, I also happen to be a 24 year-old AmeriCorps volunteer with a passion for good food, good times, and the great outdoors.
I love summer nights and Fleetwood Mac.
Watching lightning storms from the deck of my house.
Eating local, in-season produce (because it just tastes better than the stuff shipped halfway across the world!).
Singing my heart out to embarrassing soft rock classics (hello Careless Whispers!) while doing my cooking thang in the kitchen.
Slowly sipping a big cup of coffee in the morning while reading the paper.
Laughing so hard it hurts.
Browsing at the local farmer’s market.
Smelling the scent of pine in the air after a thunderstorm.
Traveling whenever I get the chance.
Having solo dance parties in my room just because I feel like it.
It’s all about the little things in life for me. It really is.
This blog serves as a forum for voicing my love of delicious food, spontaneous adventure, and dark chocolate.
I believe in not just healthy living, but happy living. And by that, I mean that I don’t aspire to perfection with my eating choices or fitness habits. While I try to eat healthy and stay active most of the time, I always like to make room for dark chocolate truffles, baking parties with friends, glasses of wine, lazy afternoons at coffee shops…that sort of thing.
I believe in savoring and cherishing every single minute thing that not only makes me happy, but others too..because in the end, happiness is what’s all about.

Several of my relatives live in New Mexico actually (Taos and Albuquerque)…I think it’s such a pretty state! My fav town there is Santa Fe.

And yes, CO rocks. It really does. I can’t wait to move back in August. I mean, I can barely contain myself! I miss all the outdoor fun the West provides. The East, while awesome in many ways, just isn’t the same.

You have beautiful hair but I can so relate to the frizz issues! I am still trying to convince myself to accept my hair and myself for what they are.
I too am at peace with wanting to be at home on a Friday night, which may be obvious as I am commenting on a Friday night!

Awwww…you’re too sweet. My hair can be nice (when it wants to be), but it can also be crazy and ridiculous. I just never know how it will end up. It has its own mind that way.
Great site and lovely pictures of nature:) I did the Jesuit Volunteer Corps in Hartford and have wonderful (and tough!) memories of the year. Best of luck to you:). Some good food spots there!
Thanks so much, Judy! Over the 9 months I’ve been in Hartford, I’ve definitely experienced both many rewarding and many heart-wrenching things here. Sounds much like your experience with the JC volunteers (the current group of JCVs live right near me actually)! And yes, there are some good food spots here. I’m bummed I won’t be able to try them all before I leave!
I really love your blog! I’m in university now, and I can definitely relate to your food related stuff. I definitely fell into the trap of eating when I was bored, not hungry, or with friends.
And not even good food… cafeteria food! *puke*

It is soooo easy to get caught up in unhealthy habits while in college. I feel your pain! I guess my best advice would be to really tune into how your body’s feeling at the moment (as difficult as that may be…I know b/c I never managed to do that in college! lol)…and try to load up your plate with veggies at the cafeteria. If you ever get frustrated, just know that this way of eating won’t last forever. Anyway, I wish you all the best with university!

Funny about Peace Corps, we could have been placed in the same country! That was my nomination, too. I love your blog title–I love a good summit sandwich. I spent a few months living in Estes Park and spent every free second in the park, only got one fourteener (Longs) but if I go to grad school in Denver (possible) I will try to bag some more.
Fun that you are moving to Boulder–I love that city so much.

A part of me wishes I had been able to do the Peace Corps and live in Africa, but I’m also been enjoying my time in AmeriCorps….Long-term service (whether it be abroad or in the States) is such an eye-opening experience.
I think we could be great friends too!
Especially because you’ve climbed Long’s Peak! Of the 33 14ers I’ve climbed, that’s my favorite one! And gosh…I’m impressed that you tackled it because it’s a beast of a hike. 15 miles and nearly 5000 vertical is nothing to sneeze at! If you ever come to CO (for grad school or otherwise), we should go 14er bagging and summit sandwich consuming.
I can’t believe I only just now read your about page. Great story! I have not climbed any 14er’s but I’ve heard a lot about them and would love to join you on one of your hikes when you get back to the west!

What a great story, it took me years to understand that loving food is not only eating big amounts of it, but to actually cook it and make the choices what you eat yourself
