When it comes to peanut butter, I can easily drift into a rut.
I always seem to pair my beloved PB with bananas or jelly. Jelly or bananas. And that’s about it.For some strange reason, apples, one of my all-time favorite fruits, always seen to get neglected during my PB pairing process.
But for whatever reason, apple inspiration struck yesterday, and it created a thing of food magic.
Think warm, caramelized apples.
Think melty PB.
Think toasted english muffin.
Thank cinnamon and honey.
Think delicious.
Behold the Warm Cinnamon Honey Apple & Pb Snackwich!
Doesn’t it just look like comfort in a snack? Like a hug from the food gods above? The perfect snack to perk up your afternoon and provide quality fuel for the rest of your day?
I’ll answer that for you.
Yes. Yes it does.
Ingredients:
- One small apple
- Cinnamon
- Honey
- One whole grain english muffin (I used Rudi’s Organic Spelt english muffin)
- 1 tbsp peanut butter
Directions:
- Slice your apple into rounds. You’ll be able to fit 2-3 on the sandwich.
- Heat pan over medium-low heat and spray with non-stick spray. Place apple rounds (and perhaps remaining apple nubbins) into pan. Why eat the leftover nubbins raw when they are guaranteed to taste better once they’re warm and caramelized? But it’s up to you, I guess. I’m just calling it like I see it.
Sprinkle with cinnamon. Wait 2-3 minutes, and then flip rounds over. Remove from pan after another 2-3 minutes. Hello cinnamon!
- Meanwhile, toast english muffin to desired crispiness. Spread 1/2 tbsp PB onto each side of the english muffin.
- Add warm apple rounds to both sides of the english muffin and add a dab of honey to the exposed apple sides. Just a dab now. Don’t overdo it. There’s more than enough sugar to go around in this snackwich.

- You can now feast on your snackwich open-faced, or alternatively, you can make a true snackwich. As so…

Awwwww….what a cute mini sandwich. I think I can safely say that this creation has kicked me out of my PB rut in a huge way. Pshhh. Banana who?

What a cute little “snackwich”
Apples just seem to say fall to me!!!
For some reason, I love warm fruit. It really enhances the flavor. I just ate an apple that I chopped, cinnamon-ized (not a word, but I’m making it one) and heated for two minutes. It was such a cozy snack. This snackwich looks perfect
Looks awesome! I am a banana/pb lover, but I will give this a shot
That looks delicious. I don’t think I’ve ever had apple on a pb sandwich, how strange! A peach, yes but never an apple. Must try this.
That looks amazing- can’t wait to try it! Have a great Thanksgiving, Lindsay!
Thanks Kelly… Happy Thanksgiving to you too!
Enjoy your last few weeks in jolly old England!
That looks gooooood. Of course, nothing call fully replace peanut butter, banana, and honey in my book
This looks really good! Even though I’m more a savory food person I think this would bring a welcomed change to my sandwiches
